Country folks are not the only ones who have the privilege to raise chickens. Even if you live in the city, you can raise chickens, too. Jordan Walker, the lead content curator of the Coops And Cages blog, shares with us on how to raise chickens in an urban setting.  Enjoy!

In this modern day and age where everything almost seems to be instant and within your reach, it is best to know that you can save money and have food straight from your own backyard. The big question is, “How is this possible?”

You can raise your own backyard flock and get to keep chickens with you with comfort. You would actually be surprised to know that chickens can adapt well in an urban setting.

Hens are easy to grow and even inexpensive to maintain. Chickens will also provide you fresh and nutritious eggs. If you have weeds or bugs at home, you will no longer have to worry about getting rid of them as the chickens will do it for you. They even provide nitrogen-rich fertilizer, and serve as great pets.

On the other hand, you would probably worry about a lot of things when it comes to raising chickens in your backyard. There isn’t really that much to worry about when it comes to doing this. It is possible for you to raise chickens. But it would be wise to know the important basics first on how to do it.

Know the local laws and city ordinances. Check for local laws and regulations in your city. Know whether it is legal for you to own chickens in your location. Contact your local municipality, homeowners’ association, or the local animal control department just to check what the laws are in your place. Some cities limit the number of chickens you can raise in your own land. There are other areas; however, that wouldn’t require permits in growing chickens in one’s backyard especially if these areas have a strong farming culture.

Figure out what breed and how many chickens you should buy. Before buying chickens, you should know first the role of the chickens you want to breed. Do you want the meat-producing or the egg-producing type, or both? Discover first what you want to help you determine which kind of breed you should buy, or what kind of coop you will need.

Build or buy a sturdy coop. In case you don’t know yet what a coop is, it is a cage or a pen where you can confine the chickens. When it comes to preparing an outside chicken coop, you must consider some important factors. Number one is the chickens’ safety. Set a 4 sq. ft. space inside the coop per chicken and 10 sq. ft. for the outdoor space. There should be no cracks or loose space where other animals could get in. To secure the chickens better, surround the coop with a wire cage. Just check if there are protruding wires or nails from the coop. Make sure that the coop has good air flow in it too.

Every once in a week or two, clean out the whole coop. This way, you get to keep your chickens from being sick and getting parasites. If you find your place a safe area for the chickens to roam, let them do it freely during the day. Just make sure that you can watch them and that they don’t go off too far.

Build a nest box for the chickens to lay their eggs on. You should also pay attention to your chickens’ nesting boxes because these are the special areas your chickens will lay eggs. Eggs are a great source of protein and eggs can be made into any kind of dish. When building a nest box, it should be large enough to hold a hen (around 12 inches) and with a small lip at the end of it to stop the egg from rolling out. The nest may consist of straw, pine needles, or wood shavings. Keep the nest box dark, and have 4 of these for every six chickens. You can set up dropping boards to catch the chicken litter and turn them into garden compost later.

Provide the right feed. Look out for a nearby feed supply store and buy a bag ahead so you won’t have any trouble of running out of stock. You should give your chickens a good amount of protein and carbohydrates into their diet. Corn, barley, and wheat are good sources of protein for your chickens. They also need calcium so feed them egg shells. Avoid giving them onions, garlic, chocolate, raw potatoes, avocados, or any damp feed because these might poison them. Keep the insecticides and other chemicals out of the chickens’ reach.

Now that you know the basics in raising chickens in the city, it’s about time you consider doing it and start the work. Count your chickens and check if they are eating and drinking well, if their food are clean and fresh, if they are having trouble breathing, if they are losing feathers, or have any other signs of disease. If they are sick and left unsupervised, your chickens will die. Hence, you should also keep a first aid kit for your chickens. You may have them dewormed and vaccinated too.

There are so many ways of growing chicken breeds and taking care of them. All it takes is that you don’t chicken out and you do your plan well.

I know I have said this before, and I will say it again, My family loves the Hispanic Culture and the FOOD!

I have a favorite place in my town to get Authentic Hispanic Food.  I call it it the Taco Truck, but it really does have a real name, just not sure what it is :).

My family spends a lot of time there and my hubby’s favorite is the Cup of Street Corn.

I decided that since I cook so much Hispanic Food at home, I would recreate my hubby’s favorite and By George, I think it’s perfecto!

And what is even better, is that it is so easy to make and a great side dish!

Enjoy!

Street Corn

What you need:

2 15 oz Cans of Corn

1/2 cup of Mayo

1/2 cup of Grated Parmesan Cheese

2 tsp of Chili Powder

What to do:

1) Heat corn and drain.

2) Mix in mayo and 1/4 cup of parmesan cheese.

3) Sprinkle remaining 1/4 cup of parmesan cheese and chili powder on top.

4) Serve warm.

Spiced Pumpkin Latte Cupcakes redo

 

I am such a Lover of Fall.

I love snuggling under a fuzzy blanket in front of the fireplace with a hot cup of coffee and a good book, all while watching the leaves gently swirl to the ground.

But I also love to bake during Fall.

I love all the Fall Spices of Nutmeg, Cloves, Pumpkin, Apple and Cinnamon.

My mind has been spinning with all the different recipes I could make that includes pumpkin during October and November.

Now I could have went simply but that’s not me so I had to spice it up a bit!!

I came up with this recipe last year when I wanted something “sweet” but full of Fall Spices.

It’s that time of year when my husband loves to get Spiced Pumpkin Lattes from Starbucks so I decided to go with that drink in a cupcake style.

I made these for my Connect Group Bible Study, but I stopped at church to drop off my kiddos first and left with seven less cupcakes.

After I got to group, the cupcakes started disappearing fast! I actually caught one of our friends in the corner of the kitchen guarding the cupcake container!!

I am so excited they were a Big Hit and I hope you enjoy them just as much!

Here is what they consist of:
Cake:
2-1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons cinnamon
1 tablespoon pumpkin pie spice
1 stick butter, softened
1-1/2 cups packed brown sugar
3 eggs
1 cup buttermilk
1/2 teaspoon vanilla paste
15 oz can of pumpkin
1 cup of cooled pumpkin spice coffee ( or plain coffee with pumpkin spice added)

1. Preheat oven to 350 degrees. Lightly grease or line 24 cupcake pan
2. Sift together flour, baking powder, baking soda, salt, and spices into bowl; set aside.
3. Place butter and brown sugar in a large mixer bowl. Blend until light and fluffy. Add eggs, one at a time, beating well. Add pumpkin and blend together
4. Stir in flour, alternating with the buttermilk. Stir in vanilla paste. After combined add in coffee slowly and mix until all is well blended.
5. Divide batter evenly. I like to use 1/4 cup of batter for each cupcake. Bake for 20-25 minutes or until when a toothpick inserted in center comes out clean.
6. Prepare frosting and spread or decorate frosting on top.

Icing:

2 sticks butter softened
1 package of cream cheese softened
1 tablespoon. Pumpkin spice coffee (granules)
1/2 teaspoon vanilla paste
2 tablespoons pumpkin spice
1/8 cup whipping cream
2 cups of powered sugar

1. Mix butter and cream cheese together until smooth
2. Slowly mix in powered sugar
3. After combined add in vanilla paste, pumpkin spice and coffee granules
4. After well mixed add in whipping cream and mix until it becomes a whipped consistently
5. Either spread of top of cupcakes or use piping to add frosting
6. Sprinkle of dash of pumpkin pie spice on too of each frosted cupcake
7. Enjoy!

Well it’s that time again for so many country folk like me.

What you say?

County Fair time, that’s what.

Our County Fair has always been one of my best memories as a child.

I remember as a little girl, I couldn’t stand the anticipation leading up to that week. See, growing up my family had very little money. Going to the County Fair was like a vacation to us, but the catch was we could only go one night.

It was way to expensive for a family of six to attend more than that one time. It seemed we always picked the last Saturday to go.

I can remember this one year, I was probably eight or nine years old, and I had been waiting for the fair all week.

My favorite thing of all time was getting a Caramel Apple and riding the Tilt of Whirl!

Oh how I loved that ride!

Saturday came and my family was so excited. I envisioned all day about the lights, the smells, the animals, the beauty pageant contestants and the people.

Well, maybe not so much the people. Carnie’s (that’s what us Arkansas folk call the carnival workers) were pretty rough looking people even when I was a child.

Anyway, back to my story, I was so excited, we were all ready to walk out the door when my stomach started hurting. I thought well it’s just from being so excited, but nope, a minute later my lunch was on the floor.

My mom went to clean me up so we could go ahead and leave, (remember this was Saturday, the last day of the fair), but my stomach had other plans.

I can remember being so disappointed, but worse than that was my parents wouldn’t let anyone go if I couldn’t go. I was the baby of the family and they didn’t think it was fair for my sisters to have fun if I didn’t get to. I thought it was unfair for them to not get to go just because I was sick.

But even after that bad experience, the fair has still been one of my most favorite times of year.

It has been a family tradition that I have carried on with my own children. I love seeing my children’s eyes light up as the sun sets and the moon is out and the bright lights from the rides shine like New York City.

See, in a rural area as we live in, the County Fair is one of the biggest highlights of the year.

And I guess I have to admit, my eyes still light up as well, as I enter the fairgrounds.

I decided this year, leading up to the fair, I wanted to recreate some of the yummy, fattening foods you might find at the fair.

Of course, Homemade Battered Corn Dogs are one of our most favorite to recreate.

Batter Recipe:

1 cup all purpose flour

1 cup yellow cornmeal

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 tsp of sugar

1 tbsp of honey

2 eggs

1 cup milk

8 hot dogs

What to do:

1) Preheat oil in fryer

2) Whisk together your dry ingredients

3) In a separate bowl mix your wet ingredients together and combine in bowl with dry

4) Mix together until batter is slightly lumpy

5) Stick skewer sticks in the end of hotdogs

6) Pour batter in a tall glass or container

7) Dunk the hot dog completely into the batter and shake off the excess

8) Emerge the battered dogs into the fryer on medium heat until golden brown

**do not have your heat to high or the batter will not be cooked in the middle

9) Serve with your favorite dipping sauce

But this year I also wanted to do something completely off the charts. Something that would have my family and friends saying, “What in the world was she thinking?”

And yes, I think I accomplished that with my (Now Famous), Are you ready for this?, “Deep Fried CUPCAKES!!!”

Of yes I did!

I filled homemade cupcakes with my homemade buttercream frosting and deep-friend those suckers in my favorite sweet batter recipe! (Recipe coming soon, be on the lookout!)

Oh, oh, oh!

My family and friends were in Complete and Utter AWE!

Can we say, YUM, YUM, YUM! But I guarantee it only takes one, two tops before you are saying, “Whoa, hold up, I’m having a sweetness overload!”

Speaking of sweetness, this summer I was introduced to The Montana Born Books called “Marietta Fair Series”.

Well, first of all I love to read romance books, but when you add County Fairs and Cowboys to the mix, well I’m a gonner for sure.

I had the opportunity by each of these wonderful and talented authors to review their books and wait, no really wait. Just kidding. Drum Roll Please…..

My, Oh My, what fun this has been while I was enjoying my own County Fair I was envisioning the Marietta County Fair characters that each played a part in these fabulous, (and temperature-rising) stories.

Please Note* Yes I am a Good Christian wife, mother and friend and yes I do love God with all my heart and soul. But come on ladies, I am still  an imperfect woman.  And I won’t lie, when I imagine the cowboys in head, my temperature raises to the boiling point! (:  No judgements please!

There is just something about actually seeing your childhood friend for more than a friend for the first and watching it blossom into love.  Especially when they have a fine behind (:

This book keeps the turn of events intriguing right from the start.  Once I started reading I couldn’t turn the pages fast enough.

If your looking to add a little spark back into your love life and a little cowboy thrill along the way, then “Beauty and the Cowboy” is just the book for you.

The second book of the Montana Born series is “Cowgirl Come Home” Debra Salonen.

We all have those teenage dreams and for most, those teenage loves.
But sometimes in life those two things collide and we have to choose which path to take.

So many times in life what we think are our dreams turns out to be completely the opposite.

“Cowgirl Come Home”, leaves you revisiting memory lane as Bailey finds that her teenage love with Paul was what she wanted all along.

I loved how the book made me feel like I was at home.  It was so comforting  seeing how past mistakes can turn into something beautiful.

I highly recommend “Cowgirl Come Home”, if you are looking for a wonderful, sweet story of love and hope with the assurance that you can always go home again.

Country Roots are my blood line.  As a child I grew up with an older sister who was in a Country Western Band.  She played in and around local areas and I can still remember getting to tag along on certain occasions.  It was always a special time listening to the band play and the musicians sing.  Something magical about the stories that were told through their songs.

      Another chocolate recipe; no one is more surprised than I am, but when you find a fun recipe it needs to be memorized. It is really easy. Easy is my favorite kind of recipe. Since I can’t eat graham crackers or chocolate (they both contain soy), I felt compelled to write about my workaround. This recipe uses cocoa powder and I substituted gingersnaps for the graham cracker. I think they should be called Gourmet S’mores.

        Do you have local festivals?

        Our county (which consists of 5 small, mainly rural, towns) hosts The Peach Festival, every July, that has been ongoing 1938! Wow! It’s actually the oldest festival in the state of Arkansas. I feel honored to be a part of such amazing history every year.

        And did I mention food?

        Just like county fairs, our festivals have some of the best food around!  Funnel Cakes, Fried Pies, Foot Long Corn Dogs, and Snow Cones, you can pretty much find it all here.

        The Peach Festival will start next week, so to get in the “Peachy” spirit I decided to start experimenting with peach recipes.

        I love peaches! I love the sweet, juicy taste that runs down your chin as you take a big bite (: In fact I don’t think I have came across a single peach dish that I haven’t loved!

        If you have read my bio, then you know I’m a crunchy girl. Technically I love the Earth, try to eat organic as much as possible and I make a lot of our soaps and cleaners. I’m also a vegetarian so I eat a lot of granola.

        I really like making my own so I can determine exactly what I am adding to it.  So I wanted to share this super easy Baked Granola and Peaches recipe with you today.

        Baked Granola & Peaches

        What you need:

        4 fresh peaches

        For Granola:

        1  cups oats

        1/2 tsp cinnamon

        1/2 tsp nutmeg

        1/4 brown sugar

        1/8 cup oil

        1/2 cup homemade or organic maple syrup

        Peaches 2

        What you do:

        1) Cut your peaches in half and remove pit.

        2) Spoon a small amount of peach out to make room for granola.

        3) Mix the oats, brown sugar, cinnamon, nutmeg and oil together and then add in maple syrup.

        4) Spoon granola onto each peach half.

        5) Line a cookie sheet with parchment paper and lay peaches on.

        6) Bake peaches at 350 for appx 15-20 mins or until peaches are soft.

        Another option for Granola:

        If you want granola for later, spread evenly on lined cookie sheet and bake.  Store in a dry container.

        Super easy and super delish!  Great for breakfast, brunch or a mid-afternoon snack.

        You can top with cream (pictured) if you desire.  This cream consists of heavy whipping cream which I mixed until it become creamed.  I’m not a cream snob (:  I enjoy my Ready Whip and Cool Whip just like anybody else!  Ice Cream is also very good on top of the warm peaches!
