Mexican Street Corn

I know I have said this before, and I will say it again, My family loves the Hispanic Culture and the FOOD!

I have a favorite place in my town to get Authentic Hispanic Food.  I call it it the Taco Truck, but it really does have a real name, just not sure what it is :).

My family spends a lot of time there and my hubby’s favorite is the Cup of Street Corn.

I decided that since I cook so much Hispanic Food at home, I would recreate my hubby’s favorite and By George, I think it’s perfecto!

And what is even better, is that it is so easy to make and a great side dish!

Street Corn

What you need:

2 15 oz Cans of Corn

1/2 cup of Mayo

1/2 cup of Grated Parmesan Cheese

2 tsp of Chili Powder

What to do:

1) Heat corn and drain.

2) Mix in mayo and 1/4 cup of parmesan cheese.

3) Sprinkle remaining 1/4 cup of parmesan cheese and chili powder on top.

4) Serve warm.
